WooHoo, I finally found the time to make my family a home made meal! We have been so busy with Memorial Day weekend and C completing the 6th grade, we have hardly been at home much longer than sleepy time.
This past weekend we had the most amazing smoked pork butt and corn on the cob, thanks to my cousins, Heather and Dennis. Another thanks to them for being on the Forks Over Knives persuasion and handing over all the leftover yummy goodness!
I’m going to call this creation “Pork in my Pocket” because it just seems right.
Pork in my Pocket [serves 4-6]
Grands Flaky Layers Biscuits [at least 6]
3/4 Cup Smoked Pork Butt, Pulled
1/2 Cup Sweet Kernel Corn, cut from the cob
6 tsp Blue Cheese Dijon Mustard [or any sauce of your liking]
Preheat oven to 350*. Cover baking sheet in parchment for easy clean up.
Combine Pulled Pork and kernels in a bowl.
Flatten 6 biscuits and spread each with 1 tsp mustard.
Scoop 1/4 of the pork and corn mixture into the center of each flattened biscuit and pull the outer ends of the biscuit together to close in the mix. Place seamed side down on your cooking sheet and bake for 12-15 minutes.
I had two biscuits remaining with no mixture, but B cannot say no to a lonely flaky biscuit. We really enjoyed the spice from the dijon, the sweet from the kernels and the smokiness from the meat, all in all it was a very successful quick fix dinner!
