SQUARE card readerWelcome to another conversation I had with B on Friday morning:

Me: I’m going to start sanding the new furniture so I can paint and sell those bad boys.

B: Sweet! I wonder if there’s something you can take with out to accept credit at your next show, like a swipe machine or something.

Me: THERE IS! It’s a little square that you stick into your smart phone and it charges the credit card from my customer. I have one already, but I can’t use it… because we don’t have smart phones yet…

B: Wow, that sucks. Way to put the cart before the horse.

Me: I know! That’s what I have been telling everybody too…

We laughed at it. Hopefully you will too!

Pork Sale - Randall's

I ran in to Randall’s today for very few items I found as a great deal in the current ad.

First, there is $0.99/lb bone-in pork chops. I purchased the above package for a mere $5! WHAT! I saved $14! What What!

Then, there is the $2.99/lb hickory smoked bacon [sold in 3lb packages, so $8.97 each], a definite deal for good quality bacon, just look at how much meat is on this cut!

Finally, select Ball Park Franks are B1G1. I bought 2 bun size @ $3.99 B1G1.

Paying $2 for a pack of franks is a lot in my book, but there is a reason I went ahead with the deal. I blew a breaker in the garage trying out an old school heat gun, but I didn’t realize the breaker was blown until about a week later. Our deep freezer is in the garage… so, yea, every piece of meat and waffle were thrown out and we are starting from scratch.

Do you like chili dogs? HEB has Wolf brand chili for $1 this week, too. I just love Wolf brand chili! Did you hear me Wolf?! I LOVE YOUR CHILI – I could totally be your taste test guinea pig, just sayin’.

FYI – Prices are good through May 24, except the bacon, it is through May 23.

I whipped up a quick dinner tonight for B and I – it was amazing and I knew it would be [because Cassity said so] so I took pictures along the way to document the greatness. I have switched it up a bit from her ingredients, but it’s a delightful variation.

Pasta + Salad

Everybody’s at the Party Pasta [serves 4-6]

1 Garlic clove, minced
1 lb Ground Pork

1 Zucchini, sliced and quartered
1 Yellow Squash, sliced and quartered
1/2 cup Mushrooms, sliced
1-2 cups Spinach, torn
Drizzle Olive Oil

2 cups mixed Pasta [I used penne and spiral]
2 Cups Cottage Cheese
1/4 cup Grated Parmesan cheese

Salt and Pepper to Taste

Cook pasta according to package directions [or check after 7 minutes of boiling and determine if you want to cook it any longer]

Cut veggies and toss them into a bowl, add salt and pepper and drizzle the oil on top. Set aside.

Cold Veggies

Brown ground pork and garlic in a nonstick sauté pan. Spoon pork into a bowl with paper towel lining [to catch the excess grease].

Cooking Meat

With remaining pork fat in the sauté pan, add the veggie mixture and sauté until softened [about 4-6 minutes on medium-high heat]. Remove from heat. [I spooned the mix into its original bowl for next step.]

Cooking Veggies

[On low heat] Add cottage cheese, parmesan cheese and about 4 tablespoons of the boiling pasta water, mix well. Use a slotted spoon to move the done pasta to the cheese mixture, stir. Add veggie mixture, stir. Add the pork, stir.

HOORAY! Everybody made it to the party!

I also made a refreshing side salad with:

1 Cucumber, de-seeded, sliced and quartered [I am saving the seeded part for tomorrow’s try at a cucumber/strawberry smoothie, completely inspired by the amazing cucumber-mint ice treat I had on Sunday by Yeti Sunshine]
1 cup Strawberries, sliced
Romaine lettuce, chopped
2 tablespoons shelled sunflower seeds
2 tablespoons Marzetti Spinach Salad Dressing

Combine and serve.


The meal was just delicious and I am super excited for tomorrow night when these left-overs hit the table again; pasta always tastes better on the second day!

PS – Ground pork has very little fat, so the remaining amount was about 3-4 tablespoons after scooping out the meat. Feel free to switch it up a bit if you feel so inclined!
